This hot weather has us continuing to hide indoors, mostly. We spent the morning “earning” money (by returning all kinds of purchases), getting Adam’s hair cut and eating gelato. This really helped to whittle down the clutter around the house.
And the other day, I actually MADE POPSICLES with the kids. If we had made a summer wish list this year, this would have been on there. Especially since my most dependable cooking magazine, Simple & Delicious, had about 5 recipes for popsicles in the last issue. (And lots more online!)
I decided to try the Berry Blue Pops first, because the ingredient list was the simplest. They are basically just frozen jello! (By the way, the other kids helped, too – but they ran off to watch TV and Adam stuck around.:)
To get the 3 colors to stand separately, you freeze the 3 bowls of liquid jello until slushy, and THEN blend them together. This would probably work equally well with any primary-colored jellos. (Here we used blue raspberry and strawberry.) Strawberry & lemon could be yummy!

Thankfully I’ve been stocking up on popsicle molds, even though Aaron has been rolling his eyes. We used them all, plus one Dixie cup for the leftovers! and that worked extremely well for Adam, actually, to just eat it out of the cup.
If Daddy helps, things go much better, also!
Jello popsicles also don’t melt as quickly as regular ones!
